Easy Shakshuka

This is an easy, one-pan, delicious shakshuka recipe! The dish is filling, well-balanced, and will feed 2-3 people. The colors of this shakshuka are striking!



Ingredients

  • 1 yellow onion

  • 1 orange bell pepper

  • 3 garlic cloves

  • dash of cayenne

  • 1 tsp curry powder

  • 1/2 tsp paprika

  • 1/2 tsp cumin

  • 1/2 tsp black pepper

  • 1/2 tsp salt

  • 28 oz can of diced tomatoes

  • 4 eggs

  • feta (optional)

  • cilantro (optional)

  • baguette (optional)


Instructions

  1. Cook the diced onions, bell peppers, and minced garlic cloves in a cast iron skillet with olive oil on medium heat until the onions are softened

  2. Add in the cayenne, curry powder, paprika, cumin, black pepper, and salt and cook for 1 min

  3. Pour in the diced tomatoes and continue to cook without a lid until the tomatoes thickens (around 8-10 minutes)

  4. Make four small depressions in the mixture and crack eggs into them

  5. Cook with a lid until the egg whites are no longer raw

  6. Sprinkle feta and cilantro on top

  7. Optional. Toast some bread to add on the side!
