4-Ingredient Macaroons

This is a simple recipe that results in a delicious macaroon! This is another one-bowl recipe, so clean-up is easy.


Yield: 12 macaroons


Ingredients

  • 2 1/2 cups of sweetened shredded coconut

  • 8 oz (half a can) sweetened condensed milk

  • 1 tsp vanilla extract (can also substitute for 1/2 vanilla extract, 1/2 coconut extract)

  • semi-sweet chocolate


Instructions

  1. Preheat the oven to 325°F

  2. In a medium sized mixing bowl, combine shredded coconut, condensed milk, and vanilla extract

  3. Bake for 12-15 minutes

  4. Melt chocolate in the microwave for 30 seconds (if not melted, microwave for increments of 10 seconds and stir the chocolate until melted)

  5. Drizzle the chocolate on top of the macaroons

I loved how simple and comforting this recipe felt because sometimes the easiest dishes end up becoming the most memorable. It reminded me of a week where I was trying to keep up with coding labs and late-night submissions while barely having time to eat properly. I was completely overwhelmed balancing everything, so I ended up using computer assignment help to get through the pressure without missing deadlines. Funny enough, having even a little extra breathing room made everyday things like baking feel relaxing again instead of rushed.
